Penelitian ini bertujuan untuk mengetahui karakteristik fisik dan kesukaan konsumen terhadap bentuk dan ukuran tortilla jagung Madura, serta menganalisis kelayakan ekonominya. Penelitian ini dimulai dengan membuat tortilla jagung Madura menggunkan bahan dasar tepung nikstamalisasi, kemudian diolah menjadi tortilla bentuk persegi dan lingkaran dengan masing-masing diameter/panjang sisi 12, 14 dan 16 cm. Kriteria kelayakan Ekonomi diukur berdasarkan Payback Period (PP), Net Present Value (NPV), Internal Rate of Return (IRR), net benefit/cost (B/C), Profitability Index (PI) dan Break Event Point (BEP). Hasil penelitian menunjukkan bentuk dan ukuran tortilla jagung Madura yang paling disukai oleh panelis adalah bentuk persegi dengan panjang sisi 14 cm. tortilla jagung Madura memiliki karakteristik fisik dintaranya L (kecerahan) sebesar 13,4 ± 0,33, nilai a (kemerahan) 3,5 ± 1,06 nilai b (indeks warna kuning) sebesar 12,4 ± 0,37. Hardness/ kekerasan tortilla yaitu 455,08 ± 105,08 g dengan tingkat kuat tarik 762.39 ± 114,93 g serta elongasi sebesar 90,94 ± 1,43 %. Ekonomi usaha tortilla jagung Madura memiliki harga jual Rp 11.000 per kemsan (isi 10 lembar roti), dinyatakan layak karena memiliki nilai PP sebesar 3,15 tahun, NPV sebesar Rp. 22.675.241, IRR 24,83%, net B/C 1,15, PI sebesar 1,45, dengan BEP produksi 10.298, BEP harga Rp. 7.892 serta BEP penerimaan sebesar Rp. 55.526.709.
