Wingko merupakan jajanan khas yang berasal dari Babat, Lamongan. Salah satu produsen wingko adalah UKM klapa Muda. Untuk menjaga mutu dan keamanan produk , maka UKM Klapa Muda perlu menerapkan Good Manufacturing Practices (GMP. GMP dilakukan dengan 3 tahap yakni, Penilaian 14 aspek dan 37 sub aspek GMP, Penentuan level GMP, dan Tindakan Perbaikan. Berdasarkan penilaian aspek dan subaspek GMP didapati 9 penyimpangan, yakni 1 penyimpangan mayor, 5 penyimpangan serius, dan 3 penyimpangan kritis. Dengan 9 penyimpangan tersebut UKM Klapa Muda termasuk level 4. Tindakan perbaikan dilakukan pada peyimpangan yang terjadi dengan memperhatikan jenis penyimpangan, penaggungjawab, frekuensi audit, dan batas waktu perbaikan. Dapat disimpulkan bedasarkan penilaian tersebut maka UKM Klapa Muda belum layak mendapatkan Sertifikat Produksi Pangan Industri Rumah Tangga sehaigga perlu dilakukan perbaikan. AbstractionIndonesia's import figures for the consumption materials and auxiliary materials sector increased by 15.49% and 16.33%. The increase in numbers is due to the high quality of products. Industries that are vulnerable to food security fraud are small and medium scale industries. One industry that needs to maintain food quality and safety is Klapa Muda SMEs that produce wingko. Wingko is a typical snack from Babat, Lamongan. As a typical food, it must be maintained, even developed. One way is to maintain product quality and safety by applying the method of Good Manufacturing Practices (GMP). The wingko industry that needs to be carried out by GMP is the UKM Klapa Muda Babat Lamongan. GMP is carried out in 3 stages, namely, Assessment of 14 aspects and 37 sub aspects of GMP, Determination of GMP levels, and Corrective Action. Based on the assessment of GMP aspects and subaspects there were 9 deviations, namely 1 major deviation, 5 serious deviations, and 3 critical deviations. With these 9 irregularities, UKM Klapa Muda includes level 4. Corrective action is taken on the deviations that occur by taking into account the types of irregularities, responsibility, audit frequency, and deadline for repairs. It can be concluded that based on the assessment, UKM Klapa Muda has not been eligible to obtain a Food Production Certificate for Home Industry, so improvements need to be made.
