Usaha kecil menengah seperti pengolahan kue serabi “Apen Julit Gettas” Kabupaten Sumenep perlu dikaji dalam hal penerapan produksi bersih, karena banyaknya kapasitas produksi kue serabi dan limbah yang dihasilkan. Tujuan dari penelitian ini adalah menentukan alternatif terbaik yang akan digunakan untuk penerapan produksi bersih di UKM “Apen Julit Gettas” dan menganalisis nilai tambah dari alternatif terbaik penerapan produksi bersih di UKM “Apen Julit Gettas”. Penelitian ini dilakukan dengan tahapan penentuan alternatif penerapan produksi bersih, penentuan alternatif terbaik penerapan produksi bersih menggunakan metode Comparative Performance Index (CPI), dan analisis nilai tambah alternatif terbaik. Hasil penelitian menunjukkan alternatif terbaik penerapan produksi bersih yaiu pengolahan ampas kelapa menjadi pakan ternak dengan nilai sebesar 285,55. Setelah dilakukan analisis nilai tambah untuk usaha pakan ternak ampas kelapa, diperoleh nilai tambah bersih yang diterima oleh perusahaan adalah sebesar Rp. 4.078,00/kg dengan persentase keuntungan sebesar 53,17%. Dari hasil perhitungan analisis nilai tambah, dapat diketahui bahwa usaha pembuatan pakan ternak ampas kelapa dapat direkomendasikan di UKM “Apen Julit Gettas” Sumenep.

The cleaner production application in a small scale medium enterprises (SMEs) such as the enterprise of Serabi pancake “Apen Julit Gettas” in Sumenep needs to be investigated more deeply due to the huge number of the waste resulted from the production of Serabi pancake. The aims of this study are to determine the best alternative which will be used in the cleaner production application in Apen Julit Gettas enterprise and to analyze the added value of that best alternative in applying the cleaner production it self. This study was conducted by determining the alternative of the application of the cleaner production, determining the best alternative using CPI (Comparative Performance Index) method, and analyzing the added value of the best alternative. The results of this study show that the best alternative in applying cleaner production is that by making the coconut pulps as the animal feed with the total score 285,55. After analyzing the added value, the company gets an additional value of Rp. 4.078,00/kg by the percentage of 53, 17% after making the coconut pulps as the animal feed. From the analysis of the added value, it can be concluded that making the coconut pulps as the animal feed is highly recommended to be applied in industry of “Apen Julit Getas” Sumenep.
